Refreshing Sake!
A little Nigori gives the fresh, sour sake a creamy depth of flavor.The slight acidity refreshes the rich flavor, and the mild taste created by a little Nigori goes well with seafood.
Sake with rich flavor produced by Yamada Nishiki
We use 100% Yamadanishiki from Arkansas, and the Yamadanishiki produced by Isabell Farm produces a delicate flavor.
Yamada-Nishiki is the king of sake rice, a rice specially designed for sake. It is not suitable for normal eating, but the starch of this rice is large and spherical, which allows it to withstand high milling and easy growth of koji rice.
Rice with good quality starch also changes the power of yeast during fermentation.
Combining this wonderful rice with the balance and delicious water of Seattle results in a strong fermentation and a powerful, well-balanced flavor of sake.
