Rich and Sweet taste junmai sake
Junmai sake is a rich, sweet sake.
It has a fresh aroma and a rich taste. It starts out with complex flavors of pear, mango and vanilla and closes with a bitter taste.
This complex flavor pairs well with appetizers and is also recommended when enjoying only sake.
Delicate taste by Yamada Nishiki
We use 100% Yamadanishiki from Arkansas, and the Yamadanishiki produced by Isabell Farm produces a delicate flavor.
Yamada-Nishiki is the king of sake rice, a rice specially designed for sake. It is not suitable for normal eating, but the starch of this rice is large and spherical, which allows it to withstand high milling and easy growth of koji rice.
Rice with good quality starch also changes the power of yeast during fermentation.
Combining this wonderful rice with the balance and delicious water of Seattle results in a strong fermentation and a powerful, well-balanced flavor of sake.
Sake brewed by the 21st generation
Shirafuji's sake is made under the supervision of Shuhei Tomisawa, the 20th generation head of the company, but this No. 4 barrel was the first to be made by Mamoru Tomisawa, the 21st generation, with all his skills.
